the inspiration: An incredible perk of being a wine director is tasting. One of my most memorable experiences is with a 1958 Diebolt-Vallois. Winemaker Jacques Diebolt, who hand-disgorged the bottle for us, was 17 when his father made the wine. He opened this delicacy after letting us taste the '76, all at 10:30 in the morning, with a breakfast of gougères. (I know, it's a tough job!) My notes read: Less gold than the '76, but golden-flecked nonetheless. Fine bubbles. Apricot, marzipan, toasted bread, caramel. The vines that made this wine now go into their Fleur de Passion cuvée. No dosage...seeing as how it was just disgorged! This kind of generosity, passion and excitement to share bottled treasures abounds in the wine business and keeps me inspired every day.
